Housewarming Party Menu & Buffalo Chicken Dip Recipe

M and I are having a few people over this Saturday for a drop-in housewarming party. I wanted to keep the menu simple and easy and (most importantly) safe since the food will be sitting out for a few hours. I didn't want anything that needed to be kept really cold or a lot of hot foods.

So, I, along with the help of my good friend Pinterest devised this menu of healthy and not-so-healthy crowd-pleasers that are fairly easy to make.

Housewarming Drop-In Menu

  • Buffalo Chicken Dip* (as if I would have a party and not include it) with tortilla chips
  • Sliced veggies (red pepper, yellow pepper, celery, carrots) and hummus
  • Bacon cheese ball with crackers
  • Brownies
  • Caprese Salad Bites
  • Rainbow Fruit Skewers (I'm so excited about these! Visually, they are stunning!)
  • Lemonade

*For the life of me I cannot find anyone who uses my exact (tried & true) Buffalo Chicken Dip Recipe so I will post it for y'all. It's easy and quick and you don't have to pre-cook any chicken. You're welcome! :)

Slow Cooker Buffalo Chicken Dip

Ingredients
2 large cans of chicken, drained (I use 98% fat free white breast meat)
1/2 cup to 1 cup Frank's Buffalo Sauce (IT MUST BE FRANKS. I cannot guarantee the results using anything else!)
1 bag (2 cups) of shredded cheddar cheese
1 packet of Hidden Valley Ranch DIPS seasoning (not ranch dressing)
1 package (8oz.) of cream cheese, softened

Directions
In your slow cooker combine the chicken, cheeses and Ranch seasoning packet. Mix until combined well. Slowly add in your buffalo sauce until you get your desired heat level. We usually do about 3/4 of a cup. Turn your slow cooker on low and allow cheeses to melt and stir occasionally until you get the wonderfully delicious orangey-peach color that signifies the deliciousness is ready. It's ready to serve once completely combined and warm. Serve with tortilla chips, celery stalks or (my favorite) baby carrots.

Next week I'll post pics of the party food/set up and the actual house so stay tuned! And have a great weekend!
