Wilmington Weekend Recap

M and I ventured to Wilmington for a wedding this past weekend. There was SO much we wanted to do in one short weekend, that we both vowed to come back for another weekend where we could see and do everything else we couldn't do this weekend. :) Anywho, we had a lot of fun. We got to see a friend get hitched in a beautiful wedding and do a little sightseeing around the city. Below are some photos from our weekend.

Beach Bag Essentials


By the time you read this...well, let's just pretend you're reading around 11:00 am EDT, M and I are on our way to the beautiful Wilmington, NC for the weekend. One of my friends and a former roommate is getting married and we decided to make a long weekend of it.

Wilmington is such an amazing city. I love the history and the beaches. I even lived there for awhile! M and I plan on spending some of our weekend soaking up the sun (through the filter of an SPF 50 sunblock) while we are there, so I thought I'd post some of my beach bag essentials. Over the next week or so, many of you will be venturing to your local beach, lake, river or the like. Here are some things you should consider bringing with you.





Top Row L-R:
1. A fun beach tote. Stop it with the straw/tan colors. BORING.
2. A beach towel. Duh.
3. A tumbler with a lid (and maybe straws). For those non-alcoholic drinks you're supposed to have on the beach. ;)
4. A coverup. Please do not be the person walking back to your car or domicile in your straight up bathing suit with nothing over it. This isn't a photo shoot.
5. A plastic sandwich baggy. As a former beach resident, I learned this trick fairly quickly. Putting your phone or makeup/chapstick/sunblock in these will prevent them from getting wet AND getting sandy. Sand is the bane of my existence.

6. Coppertone Clearly Sheer sunblock. It's my new fave and it's non-greasy. I love the spray kind but if you're venturing in to a boat, get the lotion kind. Most boat owners don't appreciate you greasing up their ride. Or is that just my brother-in-law who bans spray anything on his boat? Hmmmm.
7. A book. Old school or new school...your preference.
8. Lipbalm WITH sunscreen. Believe me, I have made the mistake of wearing a shiny lipgloss that didn't contain sunscreen all day at the pool. BAD IDEA.
9. Hat. Maybe you choose a floppy hat to provide extra sunscreen. Or maybe that's just me.

Blended Families: My New Husband and My Dog

It's no secret around TSF that I'm borderline obsessed with my pooch, Hewitt. I mean, how can you NOT be. Look at that face!


Now, M (my husband) is "not really a small dog kind of guy" (according to him). He likes all dogs, but prefers bigger dogs. (says every man EVER) Side note: What is it with men and not liking small dogs? Do they think it is some sort of mark against their masculinity to love a small dog? I have no idea...and I'm digressing...

When M and I decided to get married, it became clear that Hewitt was going to be a permanent part of his life. Now, Hewitt isn't the easiest dog to love. He's sort of a grumpy old man sheriff. He likes to boss people and other animals around and keep his eye on them at all times...but he doesn't really like to be messed with so much. He prefers to be admired from afar most of the time and he growls all the time. Essentially, he's a special needs dog with some behavioral issues...stemming from his upbringing. (I adopted him as an adult...having full knowledge of what I was getting into.) Anywho, M realized that Hewitt and I come as a package deal so if he wanted me...he had to put up with the dog.

In the few short months we've been married, I would venture to say that M has become quite attached to the little guy. (Who isn't THAT little...he weighs about 16 pounds!) M volunteers to walk him, feed him, play with him (on the rare occasion that he brings over a toy to play) and he's even begun to understand Hewitt's "language". I'll even catch M sneaking an ear scratch or belly rub with Hewitt when he thinks I'm not looking. He carries Hewitt upstairs to his dog bed almost every night...except when Hewitt decides he's capable of climbing the steps. Heck, M has even started "talking" for Hewitt. (Y'all know what I mean...it's not THAT uncommon.) And he's probably going to kill me for telling y'all that. But, oh well. It makes my little heart so happy to know that even the toughest/grumpiest of  little dogs can win over a self-proclaimed "big dog man".


This picture is pretty accurate in representing Hewitt and M's relationship. While Hewitt isn't completely 100% comfortable and submissive when he is being picked up, he still allows M to carry him. (even one-handed like an infant!) They both are probably not obsessed with one another, but they love each other enough to get along for me. Because ultimately, it's all about making me happy. HA! Just kidding. Ultimately, it's about making our "blended family" work. And I think it does just fine.

Product Review: SammyDress

Insta-Outfits v.2

I used to be really good about taking photos of my outfits and posting them on the blog.

And then life happened. And then moving happened. And then getting married happened.

Now, it's a big deal if I can get it together enough to take a quick mirror shot before work an post to Instagram. Actually that's usually what happens. It's easier than hauling out my camera and tripod. I really want to get back to posing for outfit shots with my camera, and I hopefully will get back to that...but for right now, if you want your dose of "April Fashion" you'll have to tune in to my Insta feed. Elephant in the room - let's talk about the change in skintone from the pic with the red flats to the last pic with the leopard flats. In reality, these were taken about a week apart. The reason for my drastic skintone change can be completely attributed to this. It's my absolute new favorite "sunless tanner" and I put that in quotes because I honestly think it's more of a body makeup than anything else...BUT it stays on forever and is fairly waterproof. And way easier to use than traditional tanners and smells good.

Enough of that. This post is basically just here to apologize for my lack of OOTD blog posts. I promise to work on this! I miss doing them!

Life Lately

I'll be honest, I don't really have the energy for a fun or creative post today. I had a nasty stomach bug early last week...that sort of started things off on the wrong foot. It took me a few days to recover from that. Then I got some troubling news later in the week and now M has the stomach bug that I had last week. Sigh...

Sometimes, it's just rough.

However, not everything is rough. I finished Orange is the New Black this weekend. Don't worry, I won't spoil it for y'all...but I LOVED the ending. The season finale wrapped nicely and tied up a few loose ends with plot resolution. It was one of my favorite episodes so far. If you've not seen it, you should!

If the weather is nice this weekend, I think M and I are going to do a tour and picnic at a local alpaca farm. You can pet them and feed them and have a picnic lunch. I'm obsessed! If we do end up going, there will be many, many photos on the blog. :)

Lastly, and because I have no other way to close this...I leave you with some of my favorite snapchats of late. I usually end up doing something ridiculous so these are just a few of my latest snaps. :)

World Cup Uniforms - A Fashion Perspective

As many of you loyal TSF readers know I often root for teams based on their uniforms. (among other factors like mascot or city/country of origin)

That, coupled with the start of the 2014 World Cup yesterday spawned a blog post dedicated to World Cup uniforms. My friend Luis gave me the idea and then it just...went from there. This is similar to my posts on Olympics (Summer '12) or football teams. Below are my pics for some of the best World Cup uniforms out there.

I should caution y'all. I literally know next to nothing about soccer. My knowledge extends to whatever I've gleaned from the Disney movie "The Big Green". So perdoname my wrong soccer terms. KTHX. Also, for my Euro/Non-USA readers, we call football soccer in the US.


1. Argentina
Dang y'all I love me some stripes. Light blue stripes? I'm done. I think this is why I STILL talk about Sweden's London Olympics opening ceremony outfits. AND LOOK AT THEIR COLORFUL SHOES!


2. Algeria
I love, LOVE The green! And the goalie's (keeper? guarder guy?) uniform is awesome!


3. Ecuador
I'm totally into the combination of yellow and blue here. I only wish the guy with the hat was wearing more of a vibrant color. Meh.



4. France
I love this deep blue and the subtle striping. Also, I love the monochromaticity. (this is a term I coined...thank you!)



5. Spain
Though I don't love red, yellow and blue together I think these uniforms are done well. Had the shorts been navy...meh, no thanks. But these royal blue shorts are great! And I'm really digging the socks. They make the pad things on their legs not look so awkward, you know?


6. Uruguay
I love this blue and black together. The end.

///Some random thoughts on soccer.
1. What is the goalie/keeper/guarder guy officially called?!
2.  Speaking to the #10 guy on the Uruguay team, David Beckham and anyone else...why rock the longish hair if you're going to put it in a hairband? Stop it. Either cut your hair or have it long enough to put in a pony tail. Or an Elsa-esque braid.
3. I think that of all the photos above, there are maybe 2 people smiling and they are both from Uruguay. Which brings me to two points. A: Soccer players are either mad or very serious and B: Uruguay is a happy country
4. People get CRAY and I mean CRAY CRAY about soccer. No joke.
5. I spent a better part of my day trying to figure out what FIFA stood for without Googling. I came as far as Federation for International Futbol Association. Then I Googled it. Fédération Internationale de Football Association. I was pretty DANG close! Just a different language. No big deal.
6. Go back up to the Uruguay pic. The guy on the end #10, doesn't he look like a long-haired Lance Armstrong? His face. Google Lance. Then come back. YES!
7. Why in the H are their numbers so small in the front? These guys are always moving around like crazy, so why wouldn't the umpire/referees need a larger number to see? Just doesn't make a lot of sense to me.
8. I'm guessing only baseball uses umpires? AMIRIGHT??
9. Why can't teams do really patterned uniforms? Like a tie-dye? Or a paisley? It might make things more interesting to watch.
10. Will there be vuvuzuelas at this World Cup? Or the Brasilian equivalent? (See how I did that? BraSilian instead of BraZilian. I'm good.)
11. I know of the following soccer players by name: David Beckham, Mia Hamm. The end.

How I Got Married for $3,000


Well, this post has been a long time coming. I always thought I would elope simply because of the exorbitant cost of weddings these days. But when M and I started talking about weddings, we both figured that we might eventually regret not having our family and friends there.

So, I decided to do a wedding on a low budge. I mean, a really low budge. Initially, I wanted to do it for less than $2,500 and I was pretty close to that, but it was a little over. Total cost was about $3,200. Crazy, right?

But I honestly didn't miss anything. I had all the "parts" of the wedding that I wanted and eliminated the other parts that I didn't care about or didn't need. What I ended up with was a custom wedding experience that didn't break our budgets or cause us to go into debt. Below is a rough breakdown of how it all went down.*



So, as you can see...though I didn't stick the original budget of $2,500 but I came pretty dang close. I probably could have saved more had I not ordered invitations for every PERSON we invited to the wedding instead of every couple/family we invited. So, basically, I ordered 220+ invites because we invited that many people not taking into account that most of them would be couples or families that would only receive one invitation. #facepalm But we do have a hundred or so leftover wedding invitations...so if anyone knows any good DIY projects... :)

*Now, I will say that my family was very generous in giving M and I money and my parents also bought my dress. So, my dress is NOT included in the cost of the wedding, since it was also a gift. However, my dress was this one and it retails for $599. It was on sale when I got it from from David's Bridal. I think it looks much more expensive than it is. :)



I also, through various friendships and connections, I was able to receive a number of things at a discount or free. Below is a list of the "freebies" (not including the discount I got on the wedding invitations).

1. AV/Sound Technician and Video Recording (Friend of couple)
2. Wedding Musicians (Friends of couple)
3. Wedding Hair Styling (Sister of bride)
4. Processional Coordinator (Friend of bride)
5. Bridal Bouquets (Done by bride's sister as a wedding gift)
6. Church Usage & Tables/Tablecloths (Perks of being a former employee of the church)
7. Mason Jars/Glass Vases/Serving Trays/Cake Stands (Borrowed from friends of bride)

All along, my plan was to spend no more than $2,500 on my part of the wedding obligations. (So the parts that the bride/bride's family traditionally pays for.) I knew this would include everything for the wedding ceremony and reception. I went about $700 over my original plan, but that wasn't too bad, I don't think.

The other part of our total wedding experience was our honeymoon. M paid for the honeymoon and my wedding ring (as per tradition) and both of those together was about $3,500. Again, this isn't what I paid for or even budgeted for, but it's important to mention it because it was a part of our wedding. :)

The Tale of the Cursed Apple

I don't have much substance in today's blog post...I simply wanted to tell y'all about something that happened over the weekend.



It starts with an apple. 

I bought this apple a few weeks ago and put it in the fridge. Like many things in my fridge, it got pushed to the back and forgotten about. 

We didn't eat this apple. This apple was designated for Hewitt. You see, instead of a dog, I have a pet fruit bat. Seriously, this dog loves any kind of fruit. So, often I'll buy apples and chop them into bite-sized pieces to give him as treats. He's got a pretty sensitive digestive system so these "natural" treats are great for him and something he seems to enjoy. Also, I keep them in the fridge in a Tupperware container in the summer so they are chilled. 

On Saturday, I discovered the apple I'd purchased for him a couple of weeks ago and decided to chop it up. My normal "apple chopping knife" was dirty so I decided to use a paring knife we'd received as a wedding gift. I used my handy apple slicer to get the apple into smaller chunks then I planned on chopping with the paring knife. 

On my first cut, I sliced into my finger instead of the apple. It was kind of the side of my finger so, of course, it immediately starts bleeding ridiculously bad. M saw it and decided to resume chopping since I was nursing my injury. 

M's first chop using the paring knife resulted in him cutting his finger as well! (This time it was his fingertip.) So now, M is bleeding...but we obviously didn't take that as a warning to stop. M, despite his injury, chopped the rest of the apple and placed it into the container. While he was chopping, he decided to feed a few pieces to Hewitt (who is always in the kitchen we we are chopping anything). This is not unusual and happens all the time. 

After M and I were both able to stop the bleeding we went into the living room to watch tv. A minute or two later we heard the unmistakable sounds of a dog puking. (Those of you who are dog owners know what I'm talking about.) So a hunched over and grunting dog resulted in a pile of chewed apple. 

This apple obviously didn't want to be messed with. It tried to stab us both and poison Hewitt. Never have I felt more like my Disney idol Snow White than this. (Except when maybe I try to bond with adorable woodland creatures like the chipmunks in my parking lot.)

It was a cursed apple. CURSED! Needless to say, after all of that mess, we just threw the rest of the apple away. Bad apple juju...you know?

Confessional Friday


It's been a hot minute since I linked up with Mrs. Leslie for Confessional Friday, so I figured we were due. Shall we?

//I confess that I really, really like broccoli. (I know! Who am I? I even made some GF Mac & Cheese this week and ADDED steamed broccoli to it. #weird #stahp)

//I confess that I'm obsessed with SAYING "hashtag..." out loud. I think it started with this hilarious Jimmy Fallon/JT skit and then it just spiraled. Now I use it as a joke at work a lot. Like when my coworker complained about their computer screen not being widescreen and squashing everything on her computer. I said, "Hashtag first world problems. Hashtag budget problems. Hashtag ____(their name) problems." It's funnier in person...I guess...

//I confess that for the first time in my life, I now own tiki torches. AND I LOVE THEM. Despite my life-long fear of fire.

//I confess I've had a load of clean, yet unfolded laundry in my laundry room for an entire week. Fail.

//I confess that at the series finale of Burn Notice (which M and I have been diligently watching over the last month or so) I cried. Like CRIED. :(

//I confess that when I found out my parents' house sold (this is the house I've pretty much grown up in) I cried.

//I confess that my emotional-ness lately has me concerned. I am NOT a crier.

//I confess that I'm scared to eat a fresh, whole peach because it's fuzzy and that's weird. Do people take the skins off? Plus the pit looks like a wrinkly old man knee. Gross. But I do love me some peach cobbler though.

Healthy Spaghetti Squash Casserole

 
So, there's sort of a long intro story to how this recipe and meal idea came about. To spare you the boring details, I'll summarize:
 
My Froworker (friend + coworker) Finley lives a Paleo/Primal lifestyle. She's been harping (in a good way) on the amazingness of spaghetti squash from the beginning. I, having the palette of a 5 year old, am always nervous to try new vegetables...especially those that go around impersonating my beloved. (pasta!)
 
She told me of this basic recipe that she made for her friends and I decided to make it for M and I. Below is my first attempt at cooking spaghetti squash and the delicious result that ensued. Also, M is a self-professed squash hater...and he LOVED this. Let's not talk about the fact that he still probably doesn't know that this was actually squash because I may or may not have just said "it's a healthy gluten-free spaghetti casserole"...cleverly omitting the word "squash". It's semantics, really. :)



Ingredients:
1lb. lean ground beef (or I guess you could use turkey)
3/4 lb. Italian sausage (I used mild...because I'm a wimp)
1 package (2 cups) of part skim mozzarella cheese
1 jar of your favorite pasta sauce (I used one that was gluten-free)
1 spaghetti squash



Step 1 - Prep  and cook spaghetti squash
I consulted my Froworker Finley (henceforth, Fro Fin...because it's funny), for her best advice on cooking these suckers. Though most people recommend oven baking, ain't nobody got time fo dat. So, I took her advice of cooking in the microwave and it worked perfectly! Take a large knife and poke some holes/slits in the squash to vent, then place in a microwave-safe dish and microwave for 13 minutes. (your time may differ based on your microwave wattage) About halfway through the cooking, I flipped the squash so that one side wouldn't get all hard and flat. (True story - it happens to my baked potatoes all the time!)

 
Step 2 - Sauce preparation
Fro Fin is also Italian. She tells me all the proper names and pronunciations for things. Like she told me that a red sauce with meat in it is called a ragu. Who knew? I just called it a meat sauce. A ragu sounds much better. Note: A ragu technically has other ingredients in it like celery, onion, wine, etc. Mine didn't have that, but by all means add to yours to increase the deliciousness.
 
Crumble your beef AND Italian sausage together in a pan and brown. Drain the meat and add your jar of pasta sauce. Combine and let simmer over low heat while you prepare your squash. While you're by the oven, preheat it to 375 degrees.




Step 3 - Prepare the squash!
This took a little trial and error since it was my first time preparing a spaghetti squash, but it turned out well. At first, I was trying to pick out the seeds one-by-one, saving as much of the "spaghetti" part as possible. That took forever. Ultimately I decided on the method below.
 
Slice your squash in half and carefully (because this sucker is HOT!) scoop out the center "guts" with the seeds. These look similar to pumpkin seeds. Don't worry about trying to save the squash parts around the seeds...you'll have plenty to use from the rest of the squash. Take a fork and start scraping down the sides and the squash will start to break off like spaghetti noodles. This is my favorite part. It's like spaghetti magic.

 
Keep scraping! You'll be surprised how much you can get out of this squash!
 

All the squash that's scraped should be put into a 9x13 pan or casserole dish. It will look like the above picture. (or should...I think)


Step 4 - Mix & Bake
Add in your "ragu" sauce and mix thoroughly. Flatten out in the pan with the back of a fork. Note: Fro Fin recommends an egg or two here to help it be more "casserole-y". I did not have said egg whilst making said casserole, so mine was eggless. It turned out pretty tasty so you could always add an egg here OR live on the edge like me!
 
Spread your shredded mozzarella evenly across the top of the dish and put in the (now preheated, hopefully) oven. I left mine in there for about 15 min. It was just enough to melt the cheese and make the insides bubbly.
 

Look at that deliciousness! It's healthy, gluten-free and low carb! I can't wait to experiment with the spaghetti squash even more. If you know of any delicious spaghetti squash recipes, please share!

All the squash that's scraped should be put into a 9x13 pan or casserole dish.
 
Step 4 - Mix & Bake
Add in your "ragu" sauce and mix thoroughly. Flatten out in the pan with the back of a fork. Note: Fro Fin recommends an egg or two here to help it be more "casserole-y". I did not have said egg whilst making said casserole, so mine was eggless. It turned out pretty tasty so you could always add an egg here OR live on the edge like me!
Spread your shredded mozzarella evenly across the top of the dish and put in the (now preheated, hopefully) oven. I left mine in there for about 15 min. It was just enough to melt the cheese and make the insides bubbly.
