most excellent marinade recipe

I used my favorite marinade recipe again last night. Oh man, it's SO good. It's one of those things that is just a little of this and a little of that but it has very tasty results! I've had a few requests to share it so I decided to post it today. This marinade is great on chicken or pork and I've used it for grilling or just baking in the oven. It's important to note that grilling will cause the applesauce to carmelize a bit...but that just makes it better in my opinion!

Most Excellent Marinade (Lighter/Reduced Fat options in parentheses)

Ingredients:
1 cup of applesauce (sugar-free applesauce or natural applesauce)
1 teaspoon of light brown sugar (Splenda brown sugar)
1/3 cup of soy sauce (reduced sodium or sodium-free soy sauce)
A splash of lemon juice
1/4 teaspoon of garlic powder
A dash of black pepper

Usually, I mix everything together in a tupperware container or a plastic bag and put the meat in and let it sit in the fridge for at least an hour. The longer it sits, the better it is. These particular measurements will marinate 2 chicken breasts. It can be doubled if needed.

  3. I made pork tenderloin with this marinade tonight. My son said "This is so good it's better than a golden flower." I'm not exactly sure what that means but I know it was a compliment!
