Buffalo Cauliflower Bites - Recipe

Happy Monday, friends!

Twice over the course of the weekend, I enjoyed some delicious recipes involving buffalo sauce. Now, I'm not a huge fan of buffalo sauce, so for me to do it twice in one weekend, really says something.

I should preface this recipe by saying I probably would have never made this on my own to try. However, I went to a friend's house for dinner and she made them. They were so amazing that I just had to make my own version for my family the very next night. My non-cauliflower-loving mom was snapping these up and they didn't last more than one night around my house. It would be an understatement to call them a "hit" and I  can't wait to incorporate these into my party appetizer repertoire!

Below is my recipe (slightly adapted from the original) for Buffalo Cauliflower Bites.



Buffalo Cauliflower Bites
(adapted from Persnickety Plates)
Serves: 2-4

Ingredients
1 head of cauliflower, washed and chopped into bite-sized pieces
1/2 cup all purpose flour
1/2 cup water
1/4 teaspoon garlic salt (or garlic powder)
1/4 cup Frank's Buffalo Wing Sauce*
4 Tablespoons salted butter or margarine made with sea salt, melted 
1/2 cup of Ranch dressing (for dipping!)


Directions
1. Preheat the oven to 450 degrees.

2. Spray a baking sheet with non-stick spray (I always use olive oil spray) and set aside.
3. Mix together flower, water and garlic salt. Note: the original recipe called to add hot sauce to this dredge mixture but I'm a hot wuss, so I didn't. It turned out fine without it, I think. :)
4. Dredge each piece of cauliflower into the batter until fully and evenly coated. Place onto the prepared baking sheet in a single layer.
5. Bake for about 15 minutes until the batter just hardens.
6. While baking, mix together the buffalo sauce ingredients. (Buffalo sauce and butter/margarine)
7. When the cauliflower batter starts to harden, remove from the oven and brush with the buffalo sauce. Again, fully and evenly coat each piece.
8. Put back into the oven and bake for a few more minutes (for me, it was about 8 more minutes), until  the sauce has mostly dried and the cauliflower is crispy.

Remove from the oven, let cool, then dip into the ranch and enjoy!


It is important to use a really good buffalo sauce. I always use Franks. Also, it should be noted that there is a difference between WING/BUFFALO sauce and hot sauce. Let's just say I only made that mistake one time. :)

    1. Yes! You may need to add in a little salt with the butter/buffalo sauce mixture if you prefer, but it's really a taste preference. :)

  5. These were absolutely gross. I wasted a whole head of cauliflower. When you add water and flour, it makes paste. They were pretty bad. I had to throw the entire batch out. :(

    1. Oh, I'm so sorry yours didn't work out Janine. I've made them a bunch of times since I posted and did add a little more water to the flour/water mixture. I'll add that disclaimer to the recipe. Sorry that yours were a waste!

  6. These were delicious! My hubby hates cauliflower and if I hadn't grabbed a few, he would've eaten the whole batch!
